Gluten free, Dairy free and Sugar free
Here at Fields Lodge Boutique B&B, we (I) do love a sweet treat for breakfast, but without the guilt that accompanies it! So, here is a nifty little recipe that is quick and easy as you like AND totally scrummy, and you can shine your halo after eating it!
And don’t be put off with my image of them, I literally threw those together to have a quick breakfast this week between cooking brekkies and guests departing!

I’m all for ‘free from’
If you follow me at all, either here or on social media, you will know that I follow a gluten free, dairy free and where I can, sugar free eating regime for my health. And you’ll also know I have a huge sweet tooth, kindly given to me by my Dad.
So, to be able to have these pancakes is a joy!
I have them with coconut live yoghurt and berries, as berries are the lowest in sugar fruit there is, the live coconut yoghurt is really good for your gut, and is, of course, dairy free
The only possibly naughty thing is the banana, as it’s relatively high in natural sugars, but give me that over the white stuff any day, and the upside is, it’s full of some great nutrients-potassium, magnesium, Vit C & B-6
This recipe is for one, all you do is double the ingredients for two and so on….
Recipe
1 free range egg
1 banana (ideally a little soft, so you can mash it)
Method
Slice and then mash the banana
Whisk the egg
Mix the two together to make a batter (don’t worry too much about a small lump or two)
Either on a griddle (I use the top of the Aga) or in a heavy based frying pan, slightly oiled, or not, if it’s a good non stick one (or add a piece of cooking silicone)
Spoon small amounts of the mixture around the pan so you have about 6 small dollops of mixture
Wait until the top starts to bubble
Then flip over and cook on the other side
Once cooked, pile ontop of each other, have a lovely spoonful of coconut live yoghurt (or dairy yoghurt, creme fraiche or cream) and then add berries or another fruit of your choice
The sugars in the banana are all you need to sweeten the batter
