Pancake Day Recipes
Pancake Day here at Fields Lodge Boutique B&B is a marvelous affair.
Why? You ask…. well, whereas normally pancakes are calorie loaded sugar fests, crazy for spiking your blood sugars and generally not that good for you, especially if you have an autoimmune condition….here at Fields Lodge, you can enjoy every mouthful, knowing that you are feeding your body mind and soul.
And, to avoid confusion, Crempog is Pancake in Welsh

Gluten Free, Sugar Free
If you’ve been following my posts, or stayed at the B&B, then you will know I have a passion for food and I have an awful sweet tooth and at the same time, am on a mission to feed my body and my guests bodies well.
Hence, I will try my best to give you the most healthiest version of the most naughtiest things.
I love Pancakes, stems from my childhood, of course.
Firstly, having ‘traditional’ pancakes at home, these were just plain, wafer thin pancakes, sprinkled with white sugar, a squeeze of lemon and then rolled. My Mum was great at making these and we used to be so full walking away from the tea table after enjoying these on Shrove Tuesday.
Then, when I was a little older(still at home), my Aunty Binky & Uncle Ken, who didn’t have any children. only pekingese dogs, used to take us all in their Ford Executive (we thought that was posh) over to Saundersfoot on a summers evening.
We’d explore the shops, as they would all be open in the summer eves, enjoy a walk around the harbour and then finish up at the cafe that was at the entrance to the harbour, which served American Pancakes.
Now, back in the 70s, American Pancakes where quite the thing. Nothing like the thin pancakes we’d have at home, oh, and such toppings….i explored them all, but my favourite, hands down, was the lashings of cream and syrup. YUM, YUM!!
So, it was a REAL treat when we had those toppings at home, and now, to this day, is my absolute favourite topping.
The thing is, I’m gluten and lactose intolerant and I can’t tolerate sugar/sweet these days as it makes my throat sore, so my body is very definitely telling me that I shouldn’t have this topping any longer. 🙁
So, to come to my point…I have created some marvelous pancakes here that we serve at Fields Lodge, not just on Pancake Day, but every day.
I’ll give you a few recipes here:
Crempog
Recipe
To make 2 servings
125g ground almonds
60ml water
2 eggs
1 tbsp maple syrup (you can use1 Tbsp Xylitol instead, should you wish)
¼ tsp salt
1 tsp oil
Method
• Mix all the ingredients together, add more water if required to achieve a dropping consistency
• Using a dessert spoon, spoon the mixture onto the griddle in circular portions (use a frying pan rubbed with olive oil or coconut oil if you don’t have a griddle)
• Turn each pancake when bubbles appear and the edges are cooked
• Serve with yoghurt, honey, chopped walnuts and your choice of fruit
2 Ingredient Pancakes
Recipe
Serves 2
4 Eggs
2 Bananas-ripe is best
Method
Peel, slice & mash the bananas
Whisk the eggs with a fork and add to the banana mixture
Mix well
Spoon the ‘batter’ onto a griddle or frying pan
Once bubbles appear, turn over and cook other side
Serve with yogurt (or coconut live yogurt) and mixed berries
Sweet Potato Pikelets
Recipe
Serves 2
200g Sweet Potatoes, peeled and grated
1 orange(Zest & segments)
1 Grapefruit (segments)-my preferred are Blood Grapefruits
60g Full fat Greek yogurt (or Live Coconut yogurt)
2 eggs
1tsp baking powder
Fresh mint leaves
Method
Oven at 170 degrees
Pop the grated sweet potato in a bowl, cover with cling film and pop in microwave to cook for approximately 3 minutes-until soft
Leave to cool and mash
Once cool, add orange zest, yogurt, eggs & baking powder and whip or blitz to make a batter
Line a baking tray with parchment
Spoon the mixture onto the tray
Pop into the oven and turn half way once they have firmed up-they will take about 20 minutes to cook in total
Serve the pikelets with the orange & grapefruit segments and another dollop of your choice of yogurt
This is a really refreshing pancake option and it’s a joy I discovered these!
So, if you want to enjoy guilt free pancakes, then do try these above-you’ll really enjoy them I’m sure. Each a quite different taste but all delightfully yummy.
